Today, I'm going to share a recipe that is a real delight: Baked Fish with Coconut Milk and Potatoes. But only do it if you like to eat well lol. The secret to this dish is its simplicity and the combination of incredible flavors that come together in the oven to create a true feast on the palate. Ingredients:

1 whole fish (approximately 1 kilo)
1 glass of coconut milk
4 medium potatoes, cut into wedges
1 onion, cut into thin slices
2 garlic cloves, chopped
1 lemon juice
2 tablespoons of olive oil
1 teaspoon black pepper
Cilantro, parsley and chives to taste
2 tomatoes cut into slices
Salt to taste

Method of preparation:

Firstly, wash the fish well and make diagonal cuts on the sides.
Then season the fish with salt, black pepper and lemon juice. Set aside to marinate for a few minutes.
Preheat the oven to 180°C.


In a large baking dish, place the cut potatoes and drizzle with half the olive oil. Season with salt and pepper.


On top of the potatoes, add the onion, garlic, tomato and fresh herbs (cilantro, parsley and chives).
Place the fish on this bed of potatoes and drizzle with the remaining olive oil.
Pour the coconut milk over the fish and potatoes.
Finally cover the baking tray with aluminum foil and bake for around 30 to 40 minutes.

After 30 to 40 minutes, remove the aluminum foil and let it brown for another 10 minutes in the oven. The result will be an incredibly juicy fish, accompanied by soft potatoes and a delicious coconut sauce. This dish is an explosion of flavors that will have the whole family asking for more.
