Today's recipe is very special because it brings all the flavor and tradition of Brazilian cuisine: Bobó de Frango. This dish, in addition to being delicious, is perfect for receiving guests or for those days when we want to prepare something that resembles the comfort of a family meal. Ingredients:

1 kg of chicken breast cut into cubes

2 chopped onions

2 cloves of garlic, chopped

Olive oil (for sautéing)

500g cooked cassava

Cassava cooking water

200ml coconut milk

Green chives (parsley, chives)

Salt to taste

Black pepper to taste

1 tablespoon of palm oil (optional)

1/2 cup tomato sauce

Coriander to taste (optional)

Straw potato (to decorate)

White rice (side dish)

Method of preparation:

Firstly, in a large pan, heat some olive oil and sauté the onions and garlic until golden.

Add the chicken cubes to the pan and sauté until golden on all sides.

While the chicken is stewing, place the cooked cassava in a blender with some of the cooking water and coconut milk. Beat until you obtain a homogeneous cream.

Then add the cassava cream to the pan with the chicken and stir well.

Season with salt, black pepper, tomato sauce and, if desired, palm oil to give a special touch to the flavor.

Let the bobó cook over low heat, stirring occasionally, until the chicken is fully cooked and the sauce has thickened.

Finishing:

Once the chicken bobó is ready, add chopped green chilli and, if you like, coriander to give it a touch of freshness.


Serve the chicken bobó then, hot, accompanied by white rice and garnish with straw potatoes. The contrast between the creaminess of the bobó and the crunchiness of the straw potatoes is simply irresistible.
